Inspired by an Old-World winemaking technique. The Mash: 95% Rye, 5% Barley Fermentation: The yeast consumes sugar converting it into alcohol and CO2. The Backset: During distillation, alcohol is separated from the grains and yeast creating a flavorful backset "lees." On the Lees: We add the "lees" into our barels, a technique inspired by a French winemaking process called "Sur Lie." Rolling the Barrels: By rotating the barrels, the "lees" and whiskey interact, creating a rich, complex expression. Chill Haze: We non-chill filter to preserve its best flavors.
