Introducing the third & final generation of our descendant-barrel finishing experiment. In 2016 we finished our Limited Edition Bourbon in specially-selected, toasted American Oak wine barrels. These uniquely nuanced wine casks lent their special flavor and finish to that year's celebrated bourbon. But their journey was barely begun. Later that year, the same barrels - whose richness and flavor, now increasing with experience - were lightly (No.1) charged after 2016's bourbon was dumped and bottled. Then, the same 28 barrels were refilled with our soon-to-be Double-Gold-Winning 2017 Limited Edition. This year, for our 2018 Limited Edition, the very same barrels - now with a rich complexity of their own - were dumped and deeply (No.3) charred. This heavy char over bourbon-wet oak produced a rich palate of burnt sugar, deep caramel and a lingering essence of Creme Brulee. As always, the constituent bourbon aged in these extraordinary casks is carefully hand selected and, like last year, includes our own bourbon, lovingly handmade here at Limestone Branch with our signature heirloom white corn. Lavish oak aromas display sawdust, sandalwood, baking spices, and Christmas cookies, but lurking underneath is lots of dark fruit … A truly pretty, complex, and delicious whiskey, although the oak feels like it's just a bit overdressed.
With their 101-proof 2018 release, Yellowstone has delivered a bright, easy-drinking bourbon at a relatively high proof. Oak and vanilla form the backbone of this whiskey, with subtle notes like lemongrass, almond, and jasmine coming out as well.
A bright and attractive example with a nutty, umami character on the nose. The palate is complex and well-balanced with pronounced dried fruit and spice flavours.
