Most mornings, our director of whiskey creation, Dr. Bill wanders through the woods near his home, and each time, her notices something new, be it the fragrance of last night's rainfall or the sound of leaves rustling a particular way. Captivated by the notion of a whiskey steeped in the scents, sights ad sounds of the forest, Dr. Bill brought back an ancient method of kilning barley with botanicals - in this case, juniper berries, birch bark and heather blossom. The result is a single malt as lush and leafy as the forest itself. Aromas of pine, juniper and coriander are laced with wisps of smoke. Notes of deep-green eacalyptus, lit by rays of bitter orange, drift to a slow, gently oaky finish. This is a whisky which surrounds and surprises your senses.
