For our older whiskies, our Master Whisky Maker works in small batches, selecting from a limited reserve of mature casks just as they reach their peak. This creates intriguing variations from batch to batch, driven by the unique characteristics developed by each cask over a longer maturation period. However, you'll also find a rich thread of consistency in the character of every single batch we release. Discover a deliciously sophisticated medley of ripe cherries dusted with bittersweet cocoa, freshly harvested honeycomb and candied orange peel; you'll detect a whiskper of Orkney's salty sea spray in the lingering aromatic peat smoke. This full-bodied & refined single malt whisky is a tribute to our five keystones of production. Aromatic peat from Hobbister Moor burns sweetly in our kilns, infusing malted barley by hand on our traditional malting floor. The high proportion of first-fill sherry seasoned oak casks contribute up to 60% of this whisky's final flavour and provide its rich natural colour, while Orkney's curiously temperate climate provides the ideal environment for cool maturation. Finally, cask harmonisation gives the flavours time to marry and settle before this whisky is bottled. Every whisky from the Highland Park Distillery embodies a wild harmony.
