Despite the wild winds that constantly beset our islands, Orkney has a surprisingly mild climate with few extremes of temperature. This, combined with our insistence on the finest quality casks, allow us to age our whisky for longer than many other distilleries, losing less to the Angels' Share and producing mature whisky of exceptional quality and character. Our 21 Year Old 2022 Release, created from just 14 casks, is a fine example of the rewards delivered by a long and unhurried maturation in our island warehouses. 21 Year old 2022 Realease From Casks Laid Down in 2000 and Earlier Years "At Highland Park, we pride ourselves on the COMPLEX BALANCE of our whisky -- a balance we consistently achieve by carefully hand selecting casks we know will marry well. For this 21 YEAR OLD, I brought together three different casks types -- first-fill sherry seasoned European oak hogsheads, ex-bourbon barrels and refill butts -- to creat a whisky that s both SATISFYINGLY RICH AND INTRIGUINGLY COMPLEX. Slow maturation in our island warehouses allows the rich flavours of the first-fill casks to come vibrantly to the fore -- GINGER AND SPICES from the first-fill European hogsheads, and SWEET CITRUS AND CEDAR from the ex-bourbon barrels. The refill casks balance the influence of oak from the first-fill casks and deliver a layer of complexity, while bottling the whisky at its marrying strength of 46% ensures a rich and full-bodied finish. Elegantly harmonised notes of spiced gingerbread, oranges studded with cloves and aromatic cedar wood flow, bound in a sweet cloud of heather-infused peat smoke. A haze of smoky citrus spice lingers. This whisky's deep golden hues are driven entirely naturally by the casks it matured in, without additives.
