Product Description

First matured in an American oak ex-bourbon cask, then matured in an Irish oak cask from the Wicklow Mountains. Distinctly Irish There isn't a whiskey more distinctly Irish than Pot Still. So it is only right that it foes into Irish Oak. Long before it was "the emerald isle" Ireland was known as "the wooded isle." It is said that a squirrel could cross the country touching nothing but oak trees. Over hundred of years, under all sorts of circumstances, that changed and what was plentiful fell scarce. Today we are proud to play our small part in resurrecting the use of Irish oak whiskey casks. We've sourced trees from the mounatins around our distillery to ensure we can help manage and regenerate the broadlead, deciduous woods of our mountain home. It starts with a Winter expedition to find the right trees around 130 years old, straight and tall with a consistent lower-trunk of two or three stave height. They must be well-positioned, in close proximity to neighbouring oaks, so the resulting clearing allows light to the forest floor. A light that beckons the next generations of oak, because for each tree we fell, we plant seven in return. The trunks we harvest are quarter-sawn, cut to stave-sized planks and air-dried naturally over a year. They are then coopered into hogsheads and filled with Pot Still Irish Whiskey, previously aged in a bourbon cask. Over time we nose and taste the precious liquid, waiting for the Irish oak to make its mark on the flavour. And when it does, we bottle and number it so that every cask and bottle can be ascribed to the distinct mighty oak that brought it to be. A distinctly Irish whiskey made more distinctively Irish. Strong, spicy oak, deep and opulent rises from the glass. Some dried fruit and herbal freshness resonate. … The oak is vivid, but is well captured by roasted malt notes, caramel and vanilla.

Very fruity with aromatics of vineyard peach and fine, sweetish malt. On the palate, an almost oily consistency with a distinct maltiness. A bready savouriness in the long finish.
Distiller · Amanda Schuster
The nose fills with bright and floral aromas of golden apple, quince, green tea and hops. … The finish is pleasantly fruity with a subtle earthiness to round it out. This whiskey would make an excellent before-dinner dram …

World Whiskies Awards judges · Gold · 2020
Very youthful nose, bready and light. Zesty citrus fruit and malt on the palate with a strawberry icing finish. This is obviously a young spirit but shows exciting promise if maturation continues.

A dark nose sees notes of cinnamon, plummy Port and baked apple pie come to the fore, along with pine tree needles and wood shavings. The palate offers dates, almonds, and chocolate-dipped walnuts.
Lemon aromas on the nose with some orange peel and green flavours. The palate is woody, oily, short. The finish is extremely short and very oily. There’s a cereal character to this.
