Product Description

We are the first distillery to open in Dublin City for 125 years. Yet whiskey making flows through our family's veins. Over two centuries of it. It is our deep Dublin roots that give us confidence to do things differently. The Single Grain Bottling consists of unique hand selected ex-California Cabernet Sauvignon wine barrels which impart a distinctive red berry and delicate spice character. This is not how everyone makes Irish Whiskey. It's our way. That's the Spirit of Dublin.

What critics and judges wrote

Distiller · Stephanie Moreno
The aroma is much like that you'd find in your hot breakfast cereal with a small amount of char smoke. Red raspberries and banana bread is found, but the intensity is on the low side.

Wine Enthusiast · Kara Newman · March 2023
… look for concentrated vanilla and allspice on the nose and palate. Adding water unlocks brown butter and dried fig notes, leading to a long, spiced finish. Consider as a dessert pairing.

Soft berry fruits and roasted spices, draped in the wine flavors of the California Cabernet Sauvignon barrique. … With the grain as a canvas, the wine's colors work particularly well here.

World Whiskies Awards judges · Category Winner · 2021
Baked apple with marzipan, humous, vanilla, honey, and some slightly nutty notes. There’s also some anise, and a hint of bitterness. Smoke and honey in harmony, with decent wood used along the way.

An unusual, deliciously complex dram with liquorice, a metallic flintiness, ale casks, orange and a touch of smoke. … The finish is long with very subtle smoke.
Liquorish toffee on the nose. Then candied grapefruit chunks come through. Bitter sweet dark treacle toffee on the palate. Rum filled tropical fruit cocktails in waves.
IWSC judges · Silver Outstanding · 2018
Dry vine fruit with a hint of marzipan and Bakewell tart, accompanied by soft, woody spice. … intense and engaging with a dry woodiness that is neatly balanced by fruit sugars. The finish is dry, with notes of black pepper.
